Zucchini Noodles & Turkey Meatballs

Zucchini Noodles & Turkey Meatballs are healthy and delicious meatballs, just like the way Nonna used to make!


We all love the classic Spaghetti and Meatballs, but not all of the calories. I have perfected this recipe after many trials. This recipe uses lean ground turkey so you can hit your protein goals without going over in calories. I have also swapped out traditional pasta with a zucchini noddle for added veggies!


As a kid, spaghetti and meatballs were a weekly meal in our family. It was a quick and easy meal that could be thrown together even on a weeknight. Now I have changed things around slightly, to make the recipe a little more macro-friendly. This recipe has very few ingredients to make it that much easier to prepare!


Zucchini Noodles and Turkey Meatballs


Ingredients

  • 2 lbs Ground Turkey

  • 2 Eggs

  • 2TBSP each Basil, Oregano, Garlic Powder Salt & Pepper

  • 4 C Zucchini Noodles

  • 2 Cups of Nonna's Sauce


Directions

  1. Preheat the oven to 350

  2. Combine Turkey, Eggs and spices using a hand mixer or Kitchen Aid mixer with paddle attachment.

  3. Form 2oz meatballs, 16 pieces

  4. Sear formed meatballs in a hot pan and transfer to a baking dish Top with tomato sauce and bake for 25-30 minutes

  5. Once meatballs are cooked, Sautee zucchini for 2-3 minutes just until soft

  6. Add meatballs and sauce onto cooked zucchini and top with a sprinkle of parmesan cheese.

If you are meal prepping this recipe, DO NOT COOK the zucchini. Cook the noodles only when you are ready to eat. This recipe makes 4 portions with 4 meatballs and 1 cup of zucchini.
