Leftover Breakfast Hash

Breakfast Hash is one recipe that I use every single time I'm camping. It is a great way to use up leftovers and not have to worry about planning a breakfast meal. This will keep you full for most of the day while out on the hiking trails or paddle on the lake.


There is always one night when I'm out camping that I make a beautiful steak dinner complete with baked potatoes and grilled veggies. I throughly enjoy a good steak and a glass of wine and being outdoors with a beautiful view just makes the food taste that much better. So with any leftovers from that meal, the next morning I throw it all together in a cast iron skillet, top it with some scrambled eggs and cheese and you've got a powerhouse breakfast.

 

Ingredients

  • Cooked Steak, Diced

  • Cooked Potatoes, Diced

  • Grilled Veggies of your choice

  • Scrambled Eggs

  • Shredded Cheese or Cheese Slices


Step 1: Let’s Get Started


So because this is a Leftovers recipe, the quantities of ingredients are up to you. If you have more steak leftover then it will be higher in protein, if you have more potatoes then higher in carbs. It doesn't really matter what you have as long as you cook it all up together and enjoy it!


Step 2: Get cooking

I start by browning the potatoes so they get a little crispy on the outside. Toss in the veggies and steak and let that warm up. Once its all warm, toss in your scrambled eggs (I pre-crack eggs in a bottle so I don't have to deal with broken eggs) and mix around until the eggs are 95% cooked. Top with cheese and let the cheese get melty. And that's it! Easy Peasy!
