Pesto Caprese Chicken in Foil Packs

Pesto Caprese Chicken is a healthy and simple dinner idea for your next camping trip! Serve this along side a salad or some grilled veggies and dinner is done!



Foil meals are some of the easiest way to cook on the campfire. Just add all the ingredients to the foil and let the bonfire do the work! This recipe is not only easy and delicious, it is also packed full of protein.


Pesto Caprese Chicken in Foil Packs


Ingredients

  • 4 boneless, skinless chicken breasts

  • Kosher salt and freshly ground black pepper, to taste

  • 1/4 cup pesto, homemade or store-bought

  • 2 Roma tomatoes, sliced

  • 4 ounces fresh mozzarella cheese, cut into 4 slices

  • ¼ cup basil leaves, chiffonade

Directions

  1. Start your fire and get the coals burning nice and hot. When cooking on the campfire, you don't want large flames, you want bright red coals.

  2. Cut four sheets of foil, about 12-inches long. Add chicken to the center of each foil; season with salt and pepper, to taste.

  3. Fold up all 4 sides of each foil packet. Top chicken with pesto, tomatoes and mozzarella.

  4. Fold the sides of the foil over the chicken, covering completely and sealing the packets closed.

  5. Place foil packets in a single layer on a baking sheet, or the grill rack above your fire pit. Cook until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes.*

  6. Served immediately, garnished with basil, if desired.

Campfire cooking is one of my favourite ways to cook when I'm camping. You get the added flavour from the wood and the clean up is super easy, just toss the foil in the trash and you're done.
