Easy Baked Lemon and Herb Fish

Lemon and Herb fish is one of my favourite summer recipes. Fresh herbs from the garden paired with zesty fresh lemons is a combination to die for. This recipe is good with any fish you choose. It could be salmon, haddock, cod. It doesn't matter! That is why it is so great!

I have made this recipe several times and my clients love it too! It is great for meal prep and super easy. Just throw it all into a baking dish and away you go!


Easy Baked Herb Fish


Ingredients

  • 5 (6oz) fillets Fish (Fresh or Frozen)

  • 2 TBSP Chopped Garlic

  • 1 Whole Lemon

  • Salt & Pepper

  • 1/4 C Fresh Basil Leaves

  • 1/4 C Fresh Parsley Leaves

  • 2 TBSP Olive Oil

  • Salt & Pepper

Directions

  1. Preheat to 375°F

  2. Heat 2 tablespoons of olive oil in a small saucepan over medium heat until shimmering. Add garlic cloves and cook for about 2 minutes, until fragrant.

  3. Season the fish with salt and pepper and place them in a large baking dish (or cast-iron skillet).

  4. Add garlic-infused oil and turn the fish to coat.

  5. Cover with lemon slices and chopped herbs.

  6. Cook the fish for about 15 to 20 minutes (or until the fish is cooked)

  7. Once cooled, portion into your meal prep containers and store in the fridge.
