Guilt-free Chocolate Peanut Butter Bars

Who doesn't love chocolate peanut butter bars? These bars are not only tasty, they are also vegan and gluten free. With only a few ingredients, you will satisfy that sweet tooth without the guilt!



I love a good chocolate and peanut butter bar. These bars are super easy to make and you can store them in an airtight container in the fridge to satisfy your sweet tooth cravings. Cutting the bars into smaller pieces is a great way to save calories, too!


These Chocolate Peanut Butter bars are not only tasty, but they are gluten free and vegan! They are sweetened with maple syrup, because you know, Im Canadian and would drink that stuff. Just be sure to use real maple syrup in this recipe to get the full flavour profile.


Guilt-Free Chocolate Peanut Butter Bars


Ingredients


Shortbread Crust

  • I Cup Almond Flour

  • 3 TBSP Maple Syrup

  • 1 tsp Vanilla Extract

  • 1/4 tsp Salt

  • 2 scoops Vanilla Protein Powder

Caramel

  • 1/3 Cup Natural Peanut Butter

  • 3 TBSP Maple Syrup

  • 1/4 tsp salt (if using unsalted peanut butter)

Chocolate Coating

  • 6 oz Dark Chocolate (I used dairy free)

  • 1 tsp Coconut Oil

Directions

  1. Add shortbread ingredients to a bowl and mix until a sticky dough forms. if the dough is too dry add more maple syrup.

  2. Line a square pan with parchment paper and add the dough to the bottom of the pan. Use a piece of parchment paper to smooth the dough until it covers then entire bottom of the pan. Bake at 350F for 10-15 minutes, until golden brown.

  3. While the crust bakes, mix together the caramel. Once mixed, heat in the microwave just winter the mixture starts to bubble.

  4. Once crust is cooled, spread then caramel over it and place in the freezer to harden.

  5. Once the shortbread and caramel have hardened, remove from the freezer and place on a cutting board and slice into 16 squares.

  6. Next, melt your chocolate and coconut oil together (on the stovetop or in the microwave).

  7. Coat each bar in melted chocolate then place on a parchment lined baking tray. I like to sprinkle with a little sea salt. Refrigerate until chocolate has hardened, then enjoy! Store in the fridge or freezer.
