For all my Mac & Cheese lovers out there, this recipe will not disappoint! It is packed with protein and veggies. Buffalo Chicken and Cauliflower Mac and Cheese is a staple in my house. I have been eating this for years. It is Keto friendly, gluten free and of course delicious.
Buffalo Chicken and Cauliflower Mac and Cheese has been tried and true to me for years. It is a great recipe to be cooked a head of time and used as meal prep throughout the week. Everyone loves a good Mac & Cheese and this is just a healthier option if you have that craving!
Buffalo Chicken and Cauliflower Mac and Cheese
Ingredients
1 head of cauliflower, cut into florets
2 cups cooked chicken breast, shredded or diced
4 tablespoons butter
4 tablespoons light cream cheese
1 cup 5% cream
2 cups shredded cheddar cheese
1/2 cup Franks Red Hot Sauce
Salt and pepper to taste
Chopped green onions for garnish (optional)
Directions
Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or greasing it.
Place the cauliflower florets on the prepared baking sheet and drizzle with olive oil. Season with salt and pepper. Roast in the preheated oven for about 20 minutes, or until the cauliflower is tender and slightly browned. Remove from the oven and set aside.
In a large saucepan, melt the butter over medium heat. Add the cream cheese and stir until melted and well combined.
Pour in the cream and stir until the mixture is smooth. Simmer for a few minutes to allow the flavors to meld together.
Reduce the heat to low and add the shredded cheddar cheese to the sauce. Stir until the cheese melts and the sauce is creamy. Season with salt and pepper to taste.
Stir in the buffalo sauce until well combined. Taste and adjust the amount of buffalo sauce according to your preference for spiciness.
Add the cooked chicken and roasted cauliflower to the saucepan with the buffalo cheese sauce. Stir well to coat everything evenly.
Transfer the buffalo chicken and cauliflower mac and cheese to a baking dish.
Place the baking dish in the preheated oven and bake for about 15 minutes, or until the top is golden and bubbling.
Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions, if desired.
Serve the Buffalo Chicken and Cauliflower Mac and Cheese while it's still warm and enjoy!
